Buffalo Short Rib!

Hi All,

I thought I would share some of the new menu items out on the Ranch,

Today’s item:


Utah Buffalo Short Rib, Caramelized Baby Fennel and Utah Sweet Onion, Fig Reduction & Perfect Mashed Potatoes

The Ribs are American Bison from Utah. I braise the ribs in Pepsi (Pepsi is the soda of choice in Utah) for 4-6 hours until they are fall off the bone tender.

Baby fennel hearts are chopped and mixed with Utah onions, and green apple. I use some homemade vinegar for acidity, and sea salt for depth.

The fig reduction is done by combining black mission figs with balsamic vinegar, blending reducing, and then straining.

Perfect mashed potatoes are ala Robuchon- one pound of butter per two pounds of potatoes.

Ultimately the dish is the type of sweet, sour, salty & savory I love.
