My Chicken lollipops are free range birds from Ashley Farms, always free range, humanely raised and harvested. The delicious little morsels are a combination of artisan cream cheese, shallot, roasted garlic, feathered Japanese panko crumbs, and a touch of red pepper. They are flash fried to golden brown deliciousness.
The lollipops share the plate with caramelized fennel and Peruvian sweet onion slaw accented with a dash of cask aged sherry wine vinegar, and a sweet and smokey chipotle ranch.
