Baby Beet Salad with Heirloom Tomato & Raspberry Champagne Vinaigrette

This is one of my favorite salads, from both eye appeal and mouth appeal!

I butter poach the baby beets with thyme and sage and gingerly place them among a field of watermelon radish and heirloom tomatoes. The salad is lightly dressed with a raspberry, champagne, and mint vinaigrette and finished with Hawaiian sea salt.
